It's been a long time since I last played DR, but from what I remember you can't go past a certian amount of +AC from blue rares, regardless of how you get there. I played on a server where G10s were easy to get and you could get to dual 5 in a few hours, and I couldn't get my mage past 243 AC, or some number around there, no matter what combination of rares/symbols I used.
Saying that a rare has a g20 max doesn't really mean anything for rares that aren't linear, like force or vigor (10,20,30,40,50, etc). Saying that g20 AC is the limit is simply a rough estimate. You may reach the AC cap with G17 or G23 or whatever, depending on how you get there, because AC isn't linear. For example, 5g1s is 30, but a g5 is 26. Using 20 g1s (if that were possible) would not allow you to have more AC than using 4 g5s.
Same with other rares like smart. g1 is 3, but g5 is 25. Using 2 g5s would total 50%, but it's capped at 39%, so you can use 13g1s for a total of 39% (if it were possible to equip that many). You're capped at 39%, no matter how you get there. 39% is what I heard from DingleBerry a long time ago, however, but there really isn't anyway to test for sure that I can think of. With AC it is easy to test, since it stops going up on your character sheet once you hit the cap, but your smart rare % isn't given anywhere.
But, like I said, it has been several years since I last played so I could be mistaken. This is just what I remember.
