Question about butchering

Apparently I've been failing to use the skill over and over. Whenever I get meat, my skill doesn't seem to go up. Can someone explain how to butch properly please?
I'm new to this server o_O

you must complete job related quests in order to advance your skills.

Oh, I see... Do I talk to the Butcher to do the quests?
I don't know where to get these quests..
